Pancakes A la Bolognese

Ingredients:
For the pancakes:
4 eggs
400 g plain flour
400 ml lukewarm milk
200 ml carbonated mineral water
1 tablespoon oil
a pinch of salt
For the filling:
1/2 kg minced meat (turkey, beef, pork or mixed)
1/2 l tomato juice
a little water
Dalmatian spices
2 teaspoons Vegeta
a pinch of salt
Procedure:
Beat the eggs, add half the milk and flour and mix everything well. Then add the other half of the milk, mineral water, oil, butter, salt and beat while slowly adding the flour. It is good to let the mixture stand for a while.
Heat the pan slightly, then add a little oil and heat it a little more and pour 1-2 dl of the pancake mixture evenly over the pan. Bake for a minute or two. Once it is cooked on one side, turn it over. Repeat this each time before pouring the mixture into the pan.
For the filling, add tomato sauce, a little water, spices and minced meat and cook for about 20 minutes until most of the water has evaporated and a nice sauce remains.
Fill the pancakes with the sauce so that the filling is at one end, the ends are placed to cover the sauce and the rolls are made.
Then prepare the flour in one bowl, the eggs in another, and the breadcrumbs in the third.
Pass each pancake through the flour, eggs and breadcrumbs and fry until golden brown in heated oil.
