French Apple Cake

Ingredients:


For the sponge cake:
4 eggs
6 tablespoons flour
6 tablespoons sugar
1 tablespoon olive oil
1 dl milk
a little salt
a little water


For the filling:
5 medium-sized apples
4 dl water
1 pudding
4 tablespoons sugar
1 bag of jam

Procedure:
Cook the apples in 4 dl water and leave to cool. Separately, beat the egg whites with a pinch of salt, and the yolks with a tablespoon of warm water and 6 tablespoons of sugar. Gradually add the beaten egg whites and flour, olive oil and milk to the beaten yolks. Pour the mixture into a greased and floured medium-sized baking sheet and place in a preheated oven to bake at 175 degrees for about 20 minutes. When the sponge cake has cooled, arrange the cooked apples. Make the cream by separating 2 dl of the compote juice and mixing it into the pudding powder along with the sugar, and heating 2 dl of the juice in a saucepan. When the compote juice in the saucepan is heated, add the pudding mixed with the compote juice, stirring constantly, and cook for a few minutes. Pour the cream over the sponge cake and apples and wait for it to cool. Place the icing on the cooled cake and place in the refrigerator to cool completely.
